Ingredients
Pizza Base
- 1 ball store-bought pizza dough
- Olive oil
- Kosher salt
Cheese & Sauce
- About 2 cups freshly grated low-moisture mozzarella cheese
- About ½ of a 15 oz. can organic tomato sauce
Toppings
- 1 cup kimchi, coarsely chopped
- 4 strips crispy cooked bacon, crumbled
- 3 scallions, root ends trimmed
Instructions
- Preheat Oven: Preheat your oven to 500°F (260°C) and position the rack in the lowest spot possible. Lightly grease a pizza pan or a rimmed baking sheet with non-stick spray or olive oil to prevent sticking.
- Prepare Dough: Stretch the pizza dough into a round shape that fits your pizza pan. Drizzle a small amount of olive oil on the dough, spreading it evenly with your hands. Sprinkle a pinch of kosher salt to season the dough base.
- Assemble Pizza: Start by evenly layering the freshly grated mozzarella cheese over the dough. Spoon the tomato sauce over the cheese, gently spreading it with the back of the spoon – be careful not to use too much sauce to keep a good balance. Next, sprinkle the coarsely chopped kimchi and crumbled crispy bacon on top. Thinly slice the white and light green parts of the scallions and scatter them evenly across the pizza. Save the dark green scallion parts for garnish.
- Bake: Transfer the assembled pizza to the preheated oven on the lowest rack. Bake for about 11 to 13 minutes or until the crust turns a beautiful golden brown color and the cheese bubbles.
- Finish & Serve: Remove the pizza from the oven and let it rest for a few minutes to cool slightly. Garnish with the previously reserved thinly sliced dark green scallion stalks. Cut the pizza into even slices and serve hot, enjoying the unique combination of spicy kimchi and savory bacon.
Notes
- Using a store-bought dough saves time but you can substitute with homemade dough if preferred.
- Kimchi adds a spicy, tangy flavor; adjust amount to taste for milder or stronger flavor.
- Pre-cooking bacon until crispy prevents sogginess on pizza.
- Using low-moisture mozzarella helps avoid excess moisture that can make the crust soggy.
- Be mindful of oven temperature and position for optimal crust crispiness.
- Leftover pizza can be reheated in an oven or skillet to maintain texture.
