Description

A creamy and flavorful Green Olive and Pimento Hummus that combines the classic chickpea base with the tangy, briny taste of pimento-stuffed green olives. Perfect as a healthy appetizer or snack, this hummus offers a unique twist with a hint of paprika and garlic, all easily prepared in just 10 minutes.


Ingredients

Hummus

  • 1 (15 oz.) can no salt added chickpeas/garbanzo beans, drained and rinsed (skins removed if desired)
  • 2/3 cup whole pimento-stuffed green olives
  • 1 tablespoon jarred olive liquid
  • 1 clove garlic, chopped
  • 1/4 cup freshly squeezed lemon juice
  • 1/2 teaspoon paprika
  • 1/4 teaspoon kosher salt
  • 1/4 cup olive oil

Garnish (optional)

  • Additional pimento-stuffed green olives, sliced
  • Additional paprika
  • Additional olive oil or lemon-infused olive oil


Instructions

  1. Add ingredients to food processor: Place chickpeas, pimento-stuffed green olives, jarred olive liquid, chopped garlic, lemon juice, paprika, and kosher salt into the bowl of a food processor.
  2. Begin processing and add olive oil: Start the food processor on low speed. Slowly pour olive oil through the feed tube while processing to ensure smooth blending.
  3. Process until smooth: Increase the speed to high and continue blending until the mixture is creamy and smooth with no chunks remaining. Pause to scrape down the sides as needed and continue processing.
  4. Refrigerate: Transfer the hummus to a container and refrigerate for 1 to 2 hours to allow the flavors to meld and the hummus to firm up.
  5. Garnish and serve: Before serving, garnish with sliced pimento-stuffed green olives, a drizzle of olive oil or lemon-infused olive oil, and a sprinkle of paprika as desired.

  • Removing chickpea skins can make the hummus extra smooth but is optional.
