Ingredients
Hummus
- 1 (15 oz.) can no salt added chickpeas/garbanzo beans, drained and rinsed (skins removed if desired)
- 2/3 cup whole pimento-stuffed green olives
- 1 tablespoon jarred olive liquid
- 1 clove garlic, chopped
- 1/4 cup freshly squeezed lemon juice
- 1/2 teaspoon paprika
- 1/4 teaspoon kosher salt
- 1/4 cup olive oil
Garnish (optional)
- Additional pimento-stuffed green olives, sliced
- Additional paprika
- Additional olive oil or lemon-infused olive oil
Instructions
- Add ingredients to food processor: Place chickpeas, pimento-stuffed green olives, jarred olive liquid, chopped garlic, lemon juice, paprika, and kosher salt into the bowl of a food processor.
- Begin processing and add olive oil: Start the food processor on low speed. Slowly pour olive oil through the feed tube while processing to ensure smooth blending.
- Process until smooth: Increase the speed to high and continue blending until the mixture is creamy and smooth with no chunks remaining. Pause to scrape down the sides as needed and continue processing.
- Refrigerate: Transfer the hummus to a container and refrigerate for 1 to 2 hours to allow the flavors to meld and the hummus to firm up.
- Garnish and serve: Before serving, garnish with sliced pimento-stuffed green olives, a drizzle of olive oil or lemon-infused olive oil, and a sprinkle of paprika as desired.
Notes
- Removing chickpea skins can make the hummus extra smooth but is optional.
- This hummus tastes best after chilling for at least one hour to enhance flavors.
- Adjust garlic and lemon juice to taste for a more pungent or tangy flavor.
- Use olive liquid from the jarred olives to add extra flavor and saltiness without adding salt.
- Serve with pita bread, crackers, or fresh vegetables for a delicious snack or appetizer.
