Description

A refreshing and vibrant White Peach Raspberry Almond Salad combining sweet, tangy, and nutty flavors with crisp greens, perfect for a light lunch or a flavorful side.

Ingredients

Salad Ingredients

  • 6-10 cups Baby Spring Mix or Romaine Hearts (chopped)
  • 2 White Peaches or Nectarines (sliced)
  • 6 ounces Raspberries
  • 1 cup Feta Cheese or White Cheddar Cheese
  • 3/4 cup Sliced Almonds

Dressing and Almond Coating

  • 3 Tablespoons Sugar (for almonds)
  • 3/4 cup Olive Oil
  • 2 Tablespoons Red Wine Vinegar
  • 3-4 Tablespoons Sugar (for dressing)
  • 1/2 teaspoon Salt

Instructions

  1. Assemble the Greens and Fruit: Place the baby spring mix or chopped romaine hearts on a large platter or in a salad bowl. Evenly top the greens with the sliced white peaches or nectarines, fresh raspberries, and crumbled feta or white cheddar cheese to create a colorful base for the salad.
  2. Candy the Almonds: In a small saucepan over low heat, combine the sliced almonds and 3 tablespoons of sugar. Stir often while the sugar melts and coats the almonds completely, making sure to keep the almonds from burning. Once the almonds are well coated and the sugar has caramelized, transfer them onto wax or parchment paper to cool and harden into a crunchy, sweet topping.
  3. Finish with Candied Almonds: Once cooled, sprinkle the candied almonds evenly over the assembled salad to add a delightful crunch and sweetness.
  4. Prepare the Sweet Dressing: In a small bowl or a shaker bottle, whisk together the olive oil, red wine vinegar, 3 to 4 tablespoons of sugar, and 1/2 teaspoon salt until the sugar dissolves and the dressing emulsifies. Chill the dressing in the refrigerator until ready to serve, then drizzle over the salad just before eating.

Notes

  • Use fresh, ripe white peaches or nectarines for the best flavor contrast.
  • If preferred, substitute feta cheese with white cheddar for a milder taste.
  • Watch the almonds carefully when candying to prevent burning.
  • The salad is best served immediately after adding the dressing to keep the greens crisp.
  • Adjust sugar in the dressing based on your sweetness preference.
  • This salad can be made gluten-free by ensuring all ingredients are certified gluten-free.
