Description

This White Chocolate Peppermint Fudge is a creamy, festive treat perfect for the holiday season. Made with smooth white chocolate, sweetened condensed milk, butter, and a refreshing peppermint essence, it’s topped with crushed candy canes for a delightful crunch. Ingredients

Fudge Base

  • 500 grams White Chocolate, broken into chunks
  • 1 can Sweetened Condensed Milk (approx 395ml)
  • 30 grams Butter, diced
  • 1 to 1.5 teaspoons Peppermint Essence (or to taste)

Topping

  • 4 Candy Canes, unwrapped and crushed


Instructions

  1. Prepare the Tin: Line a 20 or 23 cm square slice tin with baking paper, spraying a little cooking spray on the tin to help the paper stick, then set aside.
  2. Combine Ingredients: In a large microwave-proof bowl, add the white chocolate chunks, sweetened condensed milk, and diced butter.
  3. First Microwave: Microwave the mixture for 1 minute, then stir to begin melting and combining the ingredients.
  4. Second Microwave: Microwave for an additional minute, then stir thoroughly to combine everything smoothly.
  5. Final Melting: If lumps of white chocolate remain, microwave the mixture in 20-second bursts, stirring after each until fully melted and smooth.
  6. Add Peppermint: Stir in the peppermint essence and taste. Add a little more if a stronger peppermint flavor is desired.
  7. Pour Mixture: Pour the smooth fudge mixture into the prepared slice tin and smooth the surface evenly.
  8. Crush Candy Canes: Place the unwrapped candy canes in a ziplock bag and use a rolling pin to crush them into small and slightly larger chunks.
  9. Sprinkle Topping: Evenly sprinkle the crushed candy canes over the entire surface of the fudge in the tin.
  10. Chill: Refrigerate the fudge for at least 6 hours or overnight until fully set.
  11. Slice and Serve: Once set, cut the fudge into small squares and serve.
  12. Storage: Store any leftover fudge in an airtight container in the refrigerator for up to 2 weeks. It can also be frozen for longer storage as noted.
