- 1 cup pickled daikon radish (cut into 1/2 inch cubes)

- 1 stalk green onion (finely chopped, both greens and whites, discard root ends)
- 3 tablespoons sweet Vidalia onion or red onion (finely chopped)

- 1 lime (juiced, approximately 2 tablespoons)

Instructions
- Prepare Watermelon: Cut the watermelon into 1 1/2 inch cubes using a knife or melon baller to create fun shapes. Place the cubes in a large mixing bowl.
- Prepare Pickled Daikon: Cut the pickled daikon radish into 1/2 inch cubes and add them to the bowl with the watermelon.
- Prepare Onions: Finely dice the sweet Vidalia or red onion. To remove some of the strong bite, soak the diced onions in cold water for a few minutes, then drain and add them to the bowl.
- Prepare Green Onions: Remove the root ends and any dry tips from the green onion stalk. Finely chop the entire stalk including both the white and green parts and add to the bowl.
- Add Feta Cheese: Crumble 1/4 cup of feta cheese over the combined ingredients in the bowl.
- Add Lime Juice: Cut the lime in half and squeeze out about 2 tablespoons of fresh lime juice directly into the bowl.
- Mix Salad: Gently toss all the ingredients together to combine flavors without breaking up the watermelon cubes.
- Garnish: Sprinkle black sesame seeds over the top if using for added texture and visual appeal.
