Description

This Viral Cucumber Pepper Salad is a refreshing and vibrant summer side dish that combines crisp cucumbers, sweet mini bell peppers, and crunchy carrots, all tossed in a flavorful Asian miso ginger dressing with a kick of chili crunch oil and everything bagel seasoning. Ready in under 10 minutes, this vegan salad is perfect for quick meal prep or healthy entertaining.

Ingredients

Vegetables

  • 4-5 Persian cucumbers – cut into rounds
  • 7-8 mini sweet bell peppers – sliced into rings
  • 2 large carrots – peeled and cut into ribbons or small pieces
  • 1 medium shallot – thinly sliced

Dressing & Seasoning

  • 1/4 cup Asian miso ginger dressing (any brand, e.g., Braggs)
  • 1 tablespoon chili crunch oil
  • 1 tablespoon everything bagel seasoning

Instructions

  1. Prepare the vegetables: Add all of the chopped cucumbers, sliced mini sweet bell peppers, carrot ribbons, and thinly sliced shallot into a large mixing bowl.
  2. Dress the salad: Pour the Asian miso ginger dressing over the mixed vegetables and gently toss to coat everything evenly.
  3. Add chili oil and seasoning: Drizzle the chili crunch oil over the salad, then sprinkle the everything bagel seasoning. Toss the salad thoroughly to combine all flavors.
  4. Finishing touches and serving: Optionally, top with extra everything bagel seasoning for added flavor. Serve the salad immediately or refrigerate and chill for 1 hour. Before serving after chilling, toss again to redistribute the dressing.

Notes

  • Dressing: Use any Asian-style miso ginger dressing you prefer; Braggs is a recommended brand.
  • Vegetables: Persian or English cucumbers work best, but feel free to substitute any cucumber variety. Mini sweet bell peppers provide the best texture and sweetness, however, regular bell peppers can be used.
  • Chili Oil: Begin by adding chili oil gradually, about 1 teaspoon at a time, to adjust the spice level to your taste.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 4 days, maintaining freshness and flavor.
