Tofu Feta Cheese Ingredients
- 2 1/2 tablespoons fresh lemon juice
- 2 tablespoons nutritional yeast
- 1 1/2 tablespoons apple cider vinegar
- 1 tablespoon white miso
- 2 teaspoons extra virgin olive oil
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon garlic powder
- 1 package (15 ounces) extra firm tofu, pressed for 1 hour
Instructions
- Prepare the Marinade: In a medium mixing bowl, whisk together the fresh lemon juice, nutritional yeast, apple cider vinegar, white miso, extra virgin olive oil, fine sea salt, and garlic powder until the mixture is well combined and smooth.
- Cube the Tofu: After pressing the extra firm tofu for 1 hour to remove excess moisture, cut it into small, bite-sized cubes, which will help absorb the marinade flavors effectively.
- Marinate the Tofu: Add the cubed tofu to the bowl with the marinade and gently toss to coat every piece thoroughly. Transfer the mixture to an airtight container and refrigerate for at least 8 hours or overnight. For best flavor, allow it to marinate a couple of days and use within one week.

- If you don’t already own a tofu press, it is highly recommended to invest in one for better texture and ease of pressing tofu. Though it can be an initial expense, a good tofu press improves the final texture significantly and is a valuable kitchen tool.
