Ingredients

Tofu and Broth

  • 1 lb extra firm tofu, pressed and thinly sliced
  • 250 ml warm water
  • 2 tsp vegetable bouillon (Better Than Bouillon Vegetable Base recommended)
  • ½ tsp dried thyme
  • 1 tbsp nutritional yeast (or 1 tsp MSG)
  • ¼ tsp paprika
  • ¼ tsp garlic powder (or 1 clove garlic, grated)
  • ¼ tsp onion powder
  • 1 bay leaf
  • Dash of nutmeg
  • Dash of black pepper


Instructions

  1. Prepare the broth: In a pot, combine the vegetable bouillon and all seasonings—dried thyme, nutritional yeast, paprika, garlic powder, onion powder, bay leaf, nutmeg, and pepper. Pour in the warm water and stir until the bouillon and seasonings are fully dissolved.
  2. Simmer the tofu: Add the thinly sliced tofu into the pot with the seasoned broth. Heat the pot over medium-low heat and gently simmer the tofu. Avoid boiling to prevent the tofu from breaking apart. Continue simmering until most of the liquid has evaporated, which will take about 20-30 minutes.
  3. Season to taste and store: Once the broth has mostly been absorbed, taste the tofu and add salt or additional pepper if desired. Remove the bay leaf. Allow the tofu deli meat to cool, then store it in an airtight container in the refrigerator for up to 5 days.

Notes

  • Pressing the tofu before slicing helps it absorb flavors better and achieve a firmer texture.
  • Do not boil the tofu to keep slices intact and prevent crumbling.
