Ingredients

Vegan Eggnog Ingredients

  • 1/2 cup dairy-free milk of choice (120g)
  • 1/2 cup canned coconut milk or additional dairy-free milk (120g)
  • 1/2 cup silken tofu (100g) (or one of the soy-free alternatives)
  • 1/2 tsp pure vanilla extract (2g)
  • 3 – 4 tbsp pure maple syrup or sweetener of choice (60g)
  • 3/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/8 tsp salt
  • 1/16 tsp ground cloves
  • Optional splash of brandy or rum


Instructions

  1. Adjust Sweetness: If you are using a sweetened dairy-free milk, consider reducing the amount of maple syrup or sweetener you add to avoid the eggnog becoming too sweet.
  2. Add Ingredients to Blender: Place all the vegan eggnog ingredients including dairy-free milk, coconut milk, silken tofu, vanilla extract, maple syrup, and spices into a blender.
  3. Blend Until Smooth: Blend the mixture thoroughly until it reaches a thick, smooth consistency, ensuring that the tofu is fully incorporated with no lumps.
  4. Taste and Adjust: Sample the eggnog and add extra spices or sweetener if desired, blending again briefly to mix.
