Description

This Vanilla Lavender Cheesecake is a luscious and creamy dessert perfect for family dinners or special gatherings. Featuring a fragrant lavender twist and a classic vanilla base on a buttery graham cracker crust, this cheesecake offers a smooth, melt-in-your-mouth texture with a decorative frosting topping and sprinkles for a festive finish.

Ingredients

For the Crust

  • 1 1/2 sleeves of Graham Crackers (about 13 or 14 crackers), crushed into crumbs
  • 2 Tablespoons Sugar
  • 1 stick Butter, melted

For the Cheesecake

  • 4 (8-ounce) packages Cream Cheese, softened
  • 3/4 cup Heavy Cream
  • 1 cup Sugar
  • 1 teaspoon Vanilla Extract
  • 2 teaspoons Lavender Syrup
  • Approximately 1 teaspoon Neon Lavender or Neon Purple Food Coloring Gel

For the Topping

  • 1 can Vanilla Frosting
  • Purple and White Sprinkles

Instructions

  1. Prepare the Crust: Line the bottom of a 7-inch springform pan with parchment paper. Crush the graham crackers into fine crumbs using a food processor or blender. Mix the crumbs with sugar, then pour melted butter over and stir until evenly coated. Press the crumb mixture firmly and evenly into the bottom of the springform pan to form the crust. Place the pan in the freezer.
  2. Mix the Cheesecake Batter: In the mixing bowl of a stand mixer, combine the softened cream cheese, heavy cream, and vanilla extract. Mix on low speed until well blended and smooth. Add sugar and lavender syrup, continuing to mix until the batter is creamy and uniform. Add about a teaspoon of neon lavender food coloring gel and blend until the batter achieves the desired lavender color, scraping down the bowl as needed to ensure even coloring.
  3. Assemble and Chill: Remove the crust from the freezer and pour the cheesecake batter over it, spreading evenly. Place the pan back in the freezer for at least 4 hours or overnight to set properly.
  4. Decorate the Cheesecake: Once chilled, place vanilla frosting in a pastry bag fitted with a large fluted tip and pipe dollops evenly around the edge of the cheesecake. Sprinkle the frosting dollops with purple or lavender and white sprinkles for a festive touch.
  5. Serve: Cut the cheesecake into 2 to 3-inch slices and serve. For best texture, remove from the freezer 15 to 20 minutes before serving to allow it to soften slightly; alternatively, serve frozen for a refreshing treat.

Notes

  • The cheesecake can be decorated ahead of time while still frozen, then returned to the freezer.
  • Remove from the freezer 15 to 20 minutes before serving for a softer texture, or serve it frozen for a cool dessert especially suited to warm weather.
  • The lavender syrup adds a distinctive aromatic sweetness that complements the vanilla and cream cheese flavors.
  • Because food coloring gels vary in intensity, start with 1/2 teaspoon of gel and add more as needed to reach the desired shade.
