Ingredients

Teriyaki Sauce

  • 1/2 cup low-sodium soy sauce
  • 1/4 cup water
  • 2 tablespoons red wine vinegar
  • 2 tablespoons brown sugar (or less as desired)
  • 2 tablespoons granulated sugar (or less as desired)
  • 2 teaspoons minced garlic
  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons warm water

Ground Turkey and Vegetables

  • 1 tablespoon vegetable oil
  • 1/2 cup diced onion
  • 2 tablespoons minced garlic
  • 1 pound ground turkey
  • 1 cup broccoli (finely chopped)
  • 2 large carrots (peeled and grated)
  • 4 cups cooked white or brown rice
  • 2 green onions (diced, for garnish)


Instructions

  1. Prepare Cornstarch Mixture: In a small bowl, whisk together the cornstarch and warm water until the cornstarch dissolves completely with no grit remaining. Set aside to thicken the sauce later.
  2. Make Teriyaki Sauce: In a small saucepan over medium heat, gently whisk the low-sodium soy sauce, water, red wine vinegar, brown sugar, granulated sugar, minced garlic, and ground ginger until the sugars fully dissolve.
  3. Thicken Sauce: Slowly whisk in the prepared cornstarch mixture and simmer the sauce until it thickens enough to coat the back of a spoon. Remove from heat and set aside to keep warm.
  4. Sauté Onions: Heat vegetable oil in a large skillet over medium-high heat. Add diced onions and cook, stirring frequently, until softened and translucent, taking care not to burn them.
  5. Add Garlic and Turkey: Stir in minced garlic, then add ground turkey, breaking it apart with a spatula. Cook, stirring occasionally, until the turkey is about halfway cooked, approximately 4 to 5 minutes.
  6. Cook Vegetables: Add grated carrots and chopped broccoli to the skillet. Continue cooking until the turkey is fully cooked through and the vegetables are tender, about 5 to 6 minutes.
  7. Add Sauce and Simmer: Pour the prepared teriyaki sauce over the turkey and vegetable mixture. Stir well to coat everything evenly and let it simmer on low heat for about 5 minutes for the flavors to meld together.
  8. Assemble Bowls: Divide the cooked white or brown rice evenly among four bowls. Spoon the teriyaki turkey and vegetable mixture over the rice.
  9. Garnish and Serve: Garnish each bowl with diced green onions and serve immediately while hot for a delicious, satisfying meal.
