Sweet Potato Toast is a healthy and versatile alternative to traditional bread toast. Sliced thin and toasted until tender but firm, these sweet potato slices make a perfect base for a variety of sweet and savory toppings. This easy recipe offers a gluten-free, nutrient-dense option that can be customized with favorites like avocado mash, peanut butter with banana, or cream cheese with berries.
Ingredients
Main Ingredients
- 1 large wide sweet potato
- Cooking spray
- Salt to taste
Topping Ideas
- Cream cheese with blueberries and chia seeds
- Ricotta cheese with raspberries and coconut
- Peanut butter with banana slices and cinnamon
- Cottage cheese with tomatoes and everything seasoning
- Fried egg with fresh chopped parsley, salt and black pepper
- Avocado mashed with lime juice, salt and pepper
Instructions
- Prepare the Sweet Potato: Using a large sharp knife, cut off the bottom stem and place the sweet potato on a cutting board cut side down, keeping the skin on. Slice about 6 thin pieces 1/4″-1/3″ thick from one end to the other.
- Season the Slices: Spray the sweet potato slices lightly with cooking spray and season them with salt to taste to enhance flavor.
- Toasting in a Toaster: Insert the slices into the toaster and toast on high setting, similar to bread. Once popped up, check for fork tenderness; if desired, toast longer or adjust toaster to medium setting. Remove and cool on a wire rack before adding toppings.
- Oven Method: Preheat oven to 350℉ and place a wire rack on a rimmed baking sheet. Bake sweet potato slices for 15-20 minutes until fork tender but still firm. Remove and cool on a wire rack before topping.
- Add Toppings and Serve: Once cooled, add your choice of sweet or savory toppings and enjoy immediately.
Notes
- The nutrition label applies to one slice of sweet potato toast without toppings.
- Store leftovers in an airtight container separately from toppings to avoid sogginess. Toast to reheat for one minute before serving.
- Do not overcook; sweet potatoes should be fork tender but not completely soft so they hold toppings well.
- Use leftover sweet potato halves by roasting them for a loaded breakfast or dicing for hash.
