- 1 ear of corn, husks removed
- 1 long English cucumber, chopped
- 2 cups cherry tomatoes (vine-ripened if possible)
- 1/2 an avocado, cubed
- 2 cups fresh strawberries, quartered
- 1/2 cup fresh basil, chopped

- 1/3 cup crumbled feta

- 1/2 a lemon, juice only
- 2 Tbsp olive oil
- Salt + pepper to taste
Instructions
- Steam the Corn: Bring a large pot of water to a boil. Once boiling, either place the ear of corn directly into the water or use a steamer basket. Cover with a lid and steam for 5 minutes until tender.
- Prepare the Other Ingredients: While the corn is steaming, chop the strawberries, slice cherry tomatoes, chop cucumber, and cube the avocado. Crumble the feta cheese and chop the fresh basil. Set all aside.
- Remove Corn Kernels: After steaming, remove the corn and allow it to cool slightly until comfortable to handle. Stand the corn upright on a cutting board and carefully slice off the kernels into a large bowl.
- Combine the Salad: In a large salad bowl, combine the corn kernels, strawberries, cherry tomatoes, cucumber, avocado cubes, crumbled feta, and chopped basil. Drizzle with olive oil and freshly squeezed lemon juice, then season with salt and pepper to taste.
- Toss and Serve: Toss all ingredients gently to combine. You can enjoy the salad immediately or chill it in the refrigerator for 30 minutes to enhance the flavors and serve it cold.
Notes
- This salad is best enjoyed immediately for optimal freshness but will keep well for about 1 day if stored in an airtight container in the refrigerator.
- If preparing in advance, add the avocado, lemon juice, and olive oil just before serving to prevent sogginess and maintain texture.
