Ingredients
Peach Salad Dressing
- 1 cup yellow peach (ripe, sliced)
- 2 teaspoons lemon juice
- Zest of 1 lemon
- 2 tablespoons water
- 2 tablespoons olive oil
- 1 tablespoon honey (or agave nectar or maple syrup, optional)
- 1 ½ teaspoons poppy seeds
Fruit Salad
- 5 ounces spring mix salad (about 10 lightly packed cups)
- 1 peach (sliced into wedges)
- 1 cup strawberries (sliced)
- ½ cup blueberries
- ½ cup pecans
- 2 tablespoons goat cheese
Instructions
- Prepare the Peach Salad Dressing: Add 1 cup of ripe sliced yellow peaches, 2 teaspoons of lemon juice, zest of 1 lemon, and 2 tablespoons of water into a blender. Blend until a smooth puree forms, about 30 seconds.
- Incorporate Olive Oil: With the blender running, slowly drizzle in 2 tablespoons of olive oil and mix for another 30 seconds to emulsify the dressing smoothly.
- Sweeten and Add Poppy Seeds: Taste the dressing, then add 1 tablespoon of honey or your choice of sweetener if desired. Blend for 15 more seconds. Add 1 ½ teaspoons of poppy seeds and blend briefly for 10 seconds just to mix them evenly. Set the dressing aside.
- Assemble the Fruit Salad: In a large bowl, place 5 ounces of spring mix salad greens as the base.
- Add the Fruits and Toppings: Top the greens with sliced peach wedges, sliced strawberries, blueberries, pecans, and goat cheese.
- Serve: Serve the fruit salad with the peach dressing on the side. If mixing the salad before serving, add enough dressing to coat the greens as preferred.
