- 2 tbsp water
- 1 tsp chia seeds, ground
- 1 tsp lemon juice (optional)

Instructions
- Prepare the Strawberries: Chop the strawberries and place them in a saucepan along with the water.
- Initial Cooking: Bring the mixture to a boil with the lid on. Then reduce the heat to medium and let it bubble for 15 minutes. If you plan to store the jam for more than one week, add lemon juice now to help preserve and prevent bacterial growth.
- Mash and Reduce: Mash the strawberries using a potato masher or fork. Continue cooking on low-medium heat for about 30 minutes, allowing the jam to reduce by half. The bubbles will become smaller as the liquid evaporates. Stir regularly to prevent burning; near the end, stir constantly to avoid sticking.
- Sweeten to Taste: Taste the jam and, if desired, add the powdered sweetener, adjusting sweetness as needed.
- Add Chia Seeds and Store: Stir in the ground chia seeds thoroughly. Allow the jam to cool before transferring it to a sterilized jar. Store in the refrigerator.
