Instructions

  1. Peel the jicama: Using a knife, carefully cut off the thick skin of the jicama until the white flesh is fully exposed. Then julienne the peeled jicama into thin matchstick-like strips and set aside.
  2. Chop the fruit and veggies: Dice the green pears into bite-sized pieces. Slice the strawberries thinly and chop the green onions into small rings for a fresh bite.
  3. Toss the salad: In a large bowl, combine the spring mix greens with the julienned jicama, sliced strawberries, diced pears, and chopped green onions. Sprinkle the chopped pecans over the top.
  4. Add dressing and mix: Drizzle the salad with the cold pressed flaxseed oil if using, followed by the fig balsamic vinegar glaze. Toss everything thoroughly to evenly coat the salad ingredients.
