Ingredients
Greens
- 6 cups spring mix
Produce
- 1 jicama
- 1 package strawberries (about 8 oz)
- 2 green pears
- 3 green onions
Nuts
- 1/2 cup pecans
Dressing
- 3 tbsp cold pressed flax seed oil (optional)
- 3 tbsp fig balsamic vinegar glaze
Instructions
- Peel the jicama: Using a knife, carefully cut off the thick skin of the jicama until the white flesh is fully exposed. Then julienne the peeled jicama into thin matchstick-like strips and set aside.
- Chop the fruit and veggies: Dice the green pears into bite-sized pieces. Slice the strawberries thinly and chop the green onions into small rings for a fresh bite.
- Toss the salad: In a large bowl, combine the spring mix greens with the julienned jicama, sliced strawberries, diced pears, and chopped green onions. Sprinkle the chopped pecans over the top.
- Add dressing and mix: Drizzle the salad with the cold pressed flaxseed oil if using, followed by the fig balsamic vinegar glaze. Toss everything thoroughly to evenly coat the salad ingredients.
- Serve and enjoy: Transfer the salad to serving bowls or plates and enjoy this crisp, sweet, and nutty salad immediately for the best freshness.
Notes
- Jicama is best peeled with a knife because its skin is thick and tough.
- Use fresh, ripe strawberries and pears for optimal sweetness and texture.
- The flaxseed oil is optional and adds a mild nutty flavor and healthy fats.
- Fig balsamic vinegar glaze adds a sweet tangy dimension; substitute with regular balsamic glaze if unavailable.
- For an extra crunch, lightly toast the pecans before adding them to the salad.
- This salad is best served fresh and not stored for long periods to maintain crispness.
