- 500 grams spaghetti
- 1 teaspoon salt (for pasta water)
Meat Sauce
- 1 medium onion, finely diced
- 1/2 cup olive oil
- 4 3/4 cups tomato sauce
- 1 ½ lbs ground pork and ground veal mixture (about 3 cups total)
- 1 tablespoon salt
- 1 teaspoon ground cinnamon (heaping)
- 1/4 teaspoon ground nutmeg
- 2 whole cloves (optional)
- Grated Mizithra cheese, optional (or a combo of parmesan and romano cheese)
Instructions
- Heat oil: Heat the olive oil in a medium to large sized saucepot over medium-high heat. Add the finely diced onion and cook for about 5 minutes until softened and very slightly caramelized.
- Add ingredients: Add the tomato sauce, ground meat mixture, 1 tablespoon salt, ground cinnamon, ground nutmeg, and cloves if using to the pot. Stir everything well to combine.
- Reduce heat and simmer: Lower the heat to low-medium and cook the sauce uncovered for approximately 45 minutes. Stir regularly to prevent the sauce from sticking to the bottom of the pot.
- Boil pasta: When the sauce is nearly ready, bring a large pot of water to a boil. Add 1 teaspoon of salt and cook the spaghetti according to the package instructions until al dente.
- Serve meat sauce: Drain the cooked spaghetti thoroughly and plate it. Spoon the meat sauce over the pasta and sprinkle with grated Mizithra cheese or a Parmesan-Romano blend if desired.
