Description
Deliciously tender Southern Turnip Greens simmered in savory bacon fat and chicken bouillon for a classic Southern side dish full of rich flavor and comfort.
Ingredients
Greens
- 2 pounds fresh turnip greens (cleaned, cut, and washed)
Seasonings & Cooking
- 1 tablespoon bacon fat
- 1 teaspoon chicken bouillon (or 1 cube)
- 1 teaspoon salt
- Water (as needed to cover the greens)
Instructions
- Combine Ingredients: In a large pot, place the cleaned, cut, and washed turnip greens. Add the bacon fat, chicken bouillon, salt, and enough water to cover the greens, ensuring even cooking and flavor infusion.
- Boil and Simmer: Bring the mixture to a rapid boil over medium-high heat, then immediately reduce the heat to low to maintain a gentle simmer.
- Cook Greens: Cover the pot and cook the greens for about 45 minutes, or until they become tender. During cooking, periodically check the water level and add more if necessary to keep the greens submerged and prevent burning.
- Season to Taste: Once tender, taste the greens and add extra salt if desired for enhanced flavor. Stir well and serve warm as a comforting side dish.
Notes
- Use water just enough to cover the greens to avoid diluting the flavor.
- Bacon fat can be substituted with smoked turkey fat or vegetable oil for different flavor profiles.
- Adjust salt and bouillon according to dietary preferences.
- Ensure thorough cleaning of turnip greens as they can have grit between leaves.
