Ingredients
For the Galette Crust

- 3.5-4 Apples (firm, sweet, tart)
- 1 tsp Ground Cinnamon
- 1/4 tsp Ground Nutmeg
- 1/3 cup Caramel Sauce (homemade or store-bought)
- Pinch of Salt
- 1/2 Lemon (juice added to water to prevent browning)
For Assembly and Finishing
- 1 tsp Water
- 1 Large Egg
- 1 tbsp Turbinado Sugar (for decorating)
- 2 tbsp Apricot Jam + 1 tbsp Water (optional – for glaze)
- A drizzle of caramel sauce (for serving, optional)
- A scoop of ice cream (optional for serving)
Instructions
- Prepare the Galette Crust: In the bowl of a food processor, combine the flour, granulated sugar, and kosher salt. Pulse about 4-5 times to aerate the mixture. Add the cold, cubed butter and pulse until the butter pieces are pea-sized and well distributed.
- Hydrate the Dough: Add 3 tablespoons of ice-cold water and pulse 4-5 times until the dough is just moistened. Add another 3 tablespoons and pulse until the mixture thickens and can form a ball. Add an additional 1-2 tablespoons as needed to reach the correct consistency.
- Chill the Dough: Turn the dough onto a floured surface, press together into a ball, wrap tightly in plastic wrap, and refrigerate for at least 1 hour to firm up.
- Prepare the Apple Filling: Peel, core, and halve 3.5-4 firm, sweet, and tart apples. Place them in a container with water and lemon juice to prevent browning. Slice the apples into 1/4 inch thick slices using a sharp knife or mandoline.
- Mix the Filling: In a large bowl, combine the sliced apples with cinnamon, nutmeg, a pinch of salt, and the caramel sauce. Stir gently until evenly coated. Set aside.
- Roll Out the Dough: Remove the dough from the refrigerator and roll it out on a floured surface into a roughly 12-inch circle. Transfer the dough carefully onto a parchment-lined baking sheet. Use a 9-inch cake pan to imprint a circle in the center as a guide for the filling.
- Assemble the Galette: Arrange the spiced caramel apples within the 9-inch imprint in the dough. Fold up the edges of the dough over the apples, overlapping the sides slightly to form a rustic edge.
- Apply Egg Wash and Sugar: Beat the egg with 1 teaspoon of water to make an egg wash. Brush the dough edges with the egg wash and sprinkle the turbinado sugar on top for a sparkling finish. Place the galette in the refrigerator while the oven preheats.
- Bake the Galette: Preheat the oven to 400°F (375°F convection bake). Bake the galette for about 45 minutes or until the crust is golden brown and apples have softened and reduced in size. Begin checking around 40 minutes based on apple firmness.
- Optional Glazing: While the galette is still warm, mix apricot jam with water and brush it over the apples for a glossy, attractive glaze.
