Description

This fresh and light Shrimp Avocado Salad is a quick and easy dish reminiscent of a citrusy ceviche, perfect as an appetizer or light meal. Ready in just 10 minutes, it combines juicy cooked shrimp with creamy avocado, fresh tomato, and a zesty lime dressing accented with jalapeno and cilantro for a vibrant, flavorful bite.

Ingredients

Salad Ingredients

  • 1 pound peeled and cooked jumbo shrimp, cut into bite-size pieces
  • 1 medium Hass avocado (5 ounces), chopped
  • 1 medium tomato, chopped
  • 1 fresh jalapeño pepper, seeded and finely chopped
  • 1 tablespoon chopped fresh cilantro

Dressing Ingredients

  • 1/4 cup chopped red onion
  • Juice of 2 small limes
  • 1 teaspoon olive oil
  • 1/4 teaspoon kosher salt
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the dressing: In a small bowl, combine the chopped red onion, lime juice, olive oil, kosher salt, and freshly ground black pepper to taste. Let this mixture sit for at least 5 minutes to allow flavors to meld.
  2. Combine the salad ingredients: In a large bowl, gently toss together the cooked shrimp, chopped avocado, chopped tomato, and finely chopped jalapeno pepper to evenly distribute all elements.
  3. Add dressing and cilantro: Pour the onion and lime dressing over the shrimp mixture. Add the chopped fresh cilantro, then gently toss everything together to combine without mashing the avocado.
  4. Season and chill: Taste and adjust seasoning with additional black pepper if desired. The salad can be served immediately at room temperature or refrigerated for 15 to 30 minutes to enjoy it chilled.

Notes

  • Storing leftovers: Consume within 8 hours for best texture, as shrimp may toughen and avocado may brown due to acidity. Store in an airtight container in the refrigerator.
  • Freezing: Not recommended because the fresh ingredients do not freeze well.
  • Make-ahead instructions: Mix all ingredients except shrimp and avocado up to one day ahead, then add shrimp and avocado just before serving for optimal freshness.
