Instructions
- Preheat Oven: Preheat your oven to 450°F (230°C) to prepare for roasting the vegetables.
- Prepare Vegetables: Wash all produce thoroughly. Quarter the large tomatoes, and chop the carrots and onion into chunks of any size since they will be blended later.
- Season and Roast: Spread the tomatoes, carrots, and onion on a baking sheet. Drizzle with avocado or olive oil, then sprinkle evenly with Italian seasoning, salt, and pepper. Roast in the oven for 25-30 minutes until the tomato skins become wrinkly and caramelized.
- Blend Soup: While vegetables are roasting, add the vegetable broth, plant milk, and minced garlic to a blender. Once the roasted veggies are ready, add them to the blender and blend on high until the mixture is smooth and creamy.
- Serve and Garnish: Pour the blended soup into bowls. Garnish with roasted tomatoes, fresh basil leaves, a swirl of plant milk, a drizzle of balsamic vinegar, red pepper flakes, and adjust salt and pepper to taste. Serve warm.
