Salad Ingredients

  • 9 oz canned lentils
  • 1 ½ cups cherry tomatoes
  • 6-7 oz feta cheese
  • Scallions / green onions, finely chopped
  • Fresh parsley, finely chopped

Dressing

  • 2 tbsp olive oil
  • 1 tbsp freshly squeezed lemon juice
  • 1 tsp honey
  • 1 tsp balsamic vinegar
  • 1 tbsp water
  • 1 garlic clove, minced
  • Salt and black pepper, to taste


Instructions

  1. Prepare lentils: Thoroughly rinse and drain the canned lentils. Let them sit for a few minutes to remove any excess liquid.
  2. Prepare vegetables and cheese: Rinse cherry tomatoes and cut them into small chunks. Chop or crumble the feta cheese by hand. Finely chop fresh parsley and cut scallions into small pieces or rings.
  3. Combine salad ingredients: Toss the lentils, cherry tomatoes, feta cheese, parsley, and scallions into a large bowl.
  4. Make the dressing: In a small container, combine olive oil, lemon juice, balsamic vinegar, honey, and water. Add the minced garlic and generously season with salt and black pepper. Mix thoroughly to create the dressing.
  5. Toss salad with dressing: Drizzle the dressing over the salad mixture, combine well, then taste and adjust seasoning by adding more salt and black pepper if needed.
