- 9 oz canned lentils
- 1 ½ cups cherry tomatoes
- 6-7 oz feta cheese
- Scallions / green onions, finely chopped
- Fresh parsley, finely chopped
Dressing
- 2 tbsp olive oil
- 1 tbsp freshly squeezed lemon juice
- 1 tsp honey
- 1 tsp balsamic vinegar
- 1 tbsp water
- 1 garlic clove, minced
- Salt and black pepper, to taste
Instructions
- Prepare lentils: Thoroughly rinse and drain the canned lentils. Let them sit for a few minutes to remove any excess liquid.
- Prepare vegetables and cheese: Rinse cherry tomatoes and cut them into small chunks. Chop or crumble the feta cheese by hand. Finely chop fresh parsley and cut scallions into small pieces or rings.
- Combine salad ingredients: Toss the lentils, cherry tomatoes, feta cheese, parsley, and scallions into a large bowl.
- Make the dressing: In a small container, combine olive oil, lemon juice, balsamic vinegar, honey, and water. Add the minced garlic and generously season with salt and black pepper. Mix thoroughly to create the dressing.
- Toss salad with dressing: Drizzle the dressing over the salad mixture, combine well, then taste and adjust seasoning by adding more salt and black pepper if needed.
