Description

A tropical twist on the classic margarita, the Pineapple Coconut Margarita combines the refreshing flavors of pineapple juice and cream of coconut with the zest of lime and the smoothness of tequila. Rimmed with toasted sweetened coconut flakes and sweetened with agave syrup, this cocktail offers a delightful balance of sweet and tangy with a creamy texture perfect for summer sipping or any festive occasion.


Ingredients

For the Drink

  • 2 oz tequila
  • 1/2 oz cointreau
  • 1 oz lime juice
  • 2 oz pineapple juice
  • 1 1/2 oz cream of coconut
  • 1 tbsp agave syrup

For the Rim and Garnish

  • 1/4 cup shredded sweetened coconut (toasted)
  • pineapple slices (for garnish)


Instructions

  1. Prepare the Glass Rim: Dip the rim of your glass into the agave syrup, making sure to thoroughly coat the entire rim for better adhesion of the coconut.
  2. Coat with Toasted Coconut: Roll or dip the agave-coated rim into a plate filled with the toasted sweetened coconut flakes. Turn the glass gently to ensure an even coating along the rim.
  3. Mix the Cocktail: Fill a cocktail shaker halfway with ice. Add the tequila, cointreau, lime juice, pineapple juice, and cream of coconut into the shaker.
  4. Shake Well: Shake vigorously for 20-30 seconds until the mixture is well chilled and slightly frothy, blending the flavors fully.
  5. Serve: Pour the shaken cocktail into the garnished glass over fresh ice. Add a pineapple slice on the rim or inside the glass as a garnish. Serve immediately and enjoy!

Notes

  • To toast the shredded sweetened coconut, spread it evenly on a baking sheet and toast in a preheated oven at 350°F (175°C) for 5-7 minutes, stirring occasionally until golden brown.
  • Use freshly squeezed lime juice for the best flavor.
  • You can substitute cream of coconut with coconut milk and a little extra agave syrup for a less sweet version.
