Description

A refreshing Peach Iced Tea recipe combining homemade peach syrup, black tea, and fresh citrus for a sweet and fruity summer beverage.


Ingredients

Peach Syrup

  • 2 ripe peaches, finely diced
  • 1/2 cup honey
  • 1 cup filtered water

Tea

  • 8 cups filtered water, divided
  • 8 black tea bags

Additional Ingredients

  • 1 pound ripe peaches (about 3 medium), sliced into thin wedges
  • 1 large lemon, sliced into rounds
  • 1/2 cup packed fresh mint leaves, plus extra for garnish


Instructions

  1. Make the peach syrup: Finely dice 2 of the peaches and combine them in a small saucepan with honey and 1 cup of water. Bring to a boil, stirring occasionally to dissolve the honey and crush peaches against the pot sides. Reduce heat and simmer for about 5 minutes to extract the peach flavor and color. Remove from heat and let cool to room temperature. Once cooled, strain through a fine mesh sieve to remove solids and reserve the syrup.
  2. Make the tea: Bring 4 cups of filtered water to a boil in a kettle or saucepan. Remove from heat and add tea bags. Cover and steep for 8 minutes until water turns dark amber, then discard the tea bags. Allow the tea to cool to room temperature.
  3. Mix and chill: In a large pitcher, combine the strained peach syrup, brewed tea, and remaining 3 cups of water. Add peach slices, lemon rounds, and fresh mint to the pitcher. Reserve a few lemon rounds and mint sprigs for garnishing individual glasses. Refrigerate the mixture for at least 4 hours or overnight to meld flavors.
  4. Garnish and serve: Fill glasses with ice, pour the chilled peach iced tea over the ice, and garnish with reserved lemon wheels and fresh mint leaves. Serve immediately and enjoy the refreshing drink.

Notes

  • For a stronger peach flavor, let the syrup simmer a little longer but avoid burning.
  • You can adjust honey quantity to taste, depending on desired sweetness.
  • Use loose leaf black tea if preferred, just double strain before adding.
  • This tea can be stored in the refrigerator for up to 3 days.
