Description

A delicious and easy breakfast pizza featuring crispy pancetta, melted Gruyere cheese, fresh basil, and juicy cocktail tomatoes baked with eggs on a crispy pizza dough base. Perfect for a savory morning meal that combines rich flavors with a satisfying crunch.

Ingredients

Pizza Base

  • pizza dough

Toppings

  • 1½ cups Gruyere cheese, shredded
  • 4 eggs
  • 8 slices Pancetta
  • 4 cocktail tomatoes, quartered
  • 2 basil leaves, chopped
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 500℉ (260℃). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.
  2. Prepare Dough: Roll out the pizza dough to your desired thickness. You can shape it round or square; the recipe uses a square shape for this version.
  3. Assemble Pizza: Place the rolled-out dough onto the prepared baking sheet. Evenly sprinkle the shredded Gruyere cheese over the dough. Crack one egg into each corner of the dough, spreading four eggs across the pizza. Arrange the pancetta slices around the eggs. Add the chopped basil leaves and quartered cocktail tomatoes on top. Finish by seasoning the pizza with freshly ground black pepper to taste.
  4. Bake: Bake the assembled pizza in the preheated oven for 8 to 10 minutes or until the eggs are set and the crust is golden brown.

Notes

  • For a crispier crust, pre-bake the pizza dough for 2-3 minutes before adding toppings.
  • You can substitute pancetta with bacon if pancetta is unavailable.
  • Adjust the number of eggs and toppings according to your pizza size and preference.
  • Add fresh herbs like oregano or thyme for extra flavor.
  • Use ripe cocktail tomatoes for the best taste and juiciness.
