Ingredients
Gelatin Mixture
- 6 ounces orange gelatin (Jell-O)
- Liquid from 15-ounce can mandarin oranges
- Liquid from 20-ounce can crushed pineapple (in natural juice)
- Water (to make 2 cups total liquid with reserved fruit juice)
Fruit
- 15-ounce can mandarin oranges, drained
- 20-ounce can crushed pineapple, drained
Dairy & Toppings
- 8 ounces whipped topping (Cool Whip or similar), thawed
- 2 cups orange sherbet (or 1 pint)
Instructions
- Drain Fruit: Drain both the mandarin oranges and crushed pineapple, reserving their juices carefully for the gelatin mixture.
- Prepare Liquid: Combine the reserved fruit juices with enough water to equal 2 cups total liquid. Bring this mixture to a boil over medium heat on the stovetop.
- Dissolve Gelatin: Stir in the orange gelatin powder into the boiling liquid until completely dissolved, then remove the pan from heat.
- Mix Sherbet: Pour the gelatin mixture into a medium mixing bowl, then stir in the orange sherbet until it has melted and the mixture is smooth.
- Chill to Syrupy Stage: Place the gelatin and sherbet mixture into the refrigerator and chill for about 20 minutes until it thickens to a syrupy consistency.
- Add Fruit: Stir in the drained mandarin oranges and crushed pineapple. Return the mixture to the refrigerator and chill until it is partially set but not fully firm.
- Fold in Whipped Topping: Gently fold the thawed whipped topping into the partially set gelatin and fruit mixture until evenly combined and fluffy. Serve chilled for best texture and flavor.
Notes
- For best results, use fresh, fully thawed whipped topping to maintain the fluffy texture.
- Chilling times may vary depending on refrigerator settings; monitor the gelatin consistency carefully to achieve the syrupy and partially set stages.
- Orange sherbet can be substituted with other citrus sherbets for a different flavor twist.
- This salad is best served within 24 hours to maintain freshness and texture.
- Can be made a day ahead for convenience; keep covered and refrigerated.
