Ingredients
Dry Ingredients
- 1 cup old-fashioned oats
- 2/3 cup toasted shredded coconut (sweetened or unsweetened)
- 1/2 cup ground flaxseed
- 1/2 cup semisweet chocolate chips (or vegan chocolate chips)
- 1 tablespoon chia seeds (optional)
Wet Ingredients
- 1/2 cup creamy peanut butter
- 1/3 cup honey
- 1 teaspoon vanilla extract
Instructions
- Stir everything together: In a large mixing bowl, combine all the ingredients—old-fashioned oats, toasted shredded coconut, ground flaxseed, semisweet chocolate chips, chia seeds (if using), peanut butter, honey, and vanilla extract. Stir thoroughly until all ingredients are evenly mixed and the mixture starts to stick together.
- Chill the mixture: Cover the mixing bowl and place it in the refrigerator for 1-2 hours to chill. This step helps the ingredients bind together, making it easier to form the energy bites. To speed up chilling, spread the mixture on a baking sheet and freeze for 20-30 minutes until cool.
- Roll into balls: Once the mixture is chilled, scoop and roll it into 1-inch balls using your hands. Make sure the balls are compact so they hold their shape.
- Serve or store: Enjoy the energy bites immediately or store them in a sealed container in the refrigerator for up to one week. For longer storage, freeze the bites for up to three months and thaw before eating.
