Description
Mango Sago is a refreshing and creamy Asian dessert featuring small tapioca pearls cooked until translucent, combined with ripe mangoes, unsweetened coconut milk, and sweetened condensed milk. Blended into a smooth, velvety mixture, it is chilled to perfection and served topped with fresh mango chunks. This delightful sweet treat is perfect for warm days and offers a wonderful balance of tropical fruit flavor and silky texture.
Ingredients
Tapioca
- 1/2 cup small-sized uncooked tapioca pearls
- 4 cups water (for boiling)
Mango Mixture
- 3 ripe mangos
- 7 ounces unsweetened coconut milk (about half of a 13.5 oz./400ml can)
- 1/4 cup sweetened condensed milk (or more to taste)
- 1/2 teaspoon vanilla extract
Instructions
- Boil Tapioca: In a pot, bring 4 cups of water to a full boil. Once boiling, add the small tapioca pearls and stir. Bring back to a boil, then reduce to a simmer. Cook for 20 minutes, or until the tapioca pearls turn fully transparent, indicating they are cooked through. If after 20 minutes the pearls still have white centers, turn off the heat, cover the pot, and let the tapioca sit in the hot water for an additional 10 minutes to finish cooking.
- Cool Tapioca: When the tapioca is cooked, drain it and rinse under cold running water to stop the cooking process and cool the pearls. Then, soak the tapioca in a bowl of cold water and set aside until ready to use.
- Prepare Mango: Peel the mangos and carefully remove the pits. Reserve a large handful of mango chunks for topping the dessert later. Cut the remaining mango flesh into pieces for blending.
- Blend Mixture: In a blender, combine the coconut milk, sweetened condensed milk, vanilla extract, and the mango pieces prepared for blending. Blend until you achieve a smooth, creamy mixture. Transfer this mango-coconut blend into a large bowl. For best results, chill this mixture in the refrigerator for at least one hour if you prefer a cold dessert.
- Combine & Serve: When ready to serve, drain the tapioca pearls from their soaking water and add them to the chilled mango mixture. Mix gently to combine. Spoon the mixture into individual serving bowls and garnish with the reserved mango chunks on top. Serve immediately as a cool, refreshing dessert.
