Ingredients

Simple Syrup

  • 1/2 cup water
  • 1/2 cup granulated sugar

Mango Puree

  • 1 lb. mango chunks (fresh or thawed frozen, equals about 4 large mangoes)
  • 1/4 cup fresh lime juice (equals 3-5 limes, divided)
  • 1/4 cup fresh mint leaves (plus more for garnish)
  • 1/2 cup cooled simple syrup

Assembly

  • Ice cubes
  • Club soda (1-2 bottles, to fill glasses)
  • Fresh mint sprigs (for garnish)
  • Lime wedges (for garnish)


Instructions

  1. Make Simple Syrup: In a small saucepan, bring 1/2 cup water to a gentle boil over medium heat. Add 1/2 cup granulated sugar and stir continuously with a spoon or whisk until all sugar dissolves completely. Remove from heat and allow to cool completely.
  2. Prepare Mango Chunks: Peel and cut fresh mangoes close to the pit to extract chunks. Score flesh into squares without cutting skin, then scoop out cubes with a spoon. Alternatively, thaw 1 lb. frozen mango chunks fully and drain any excess water.
  3. Blend Mango Puree: In a blender, combine 1 lb. mango chunks, 1/4 cup fresh lime juice, 1/4 cup fresh mint leaves, and 1/2 cup cooled simple syrup. Pulse until smooth and fully combined.
  4. Assemble Mocktails: Fill highball glasses about two-thirds full with ice cubes. Pour approximately 1/3 cup mango puree over the ice. Top with club soda until the glass is full, then stir gently to combine.
  5. Garnish and Serve: Add a fresh mint sprig and a lime wedge to each glass. Serve immediately for the best refreshing taste.
