Description

This vibrant Lime Vinaigrette is a zesty and flavorful dressing perfect for salads, grilled vegetables, or as a marinade. Made with fresh lime juice, olive oil, garlic, honey, and a hint of cumin, it combines bright citrus notes with a subtle warmth and a touch of sweetness. Quick to prepare and versatile, it enhances any dish with a fresh, tangy kick.

Ingredients

Vinaigrette Ingredients

  • 1/4 cup lime juice
  • 1/2 cup extra-virgin olive oil (or avocado oil)
  • 1 clove garlic, smashed, peeled and minced
  • 2 tablespoons plus 1 teaspoon honey or pure maple syrup
  • 1 teaspoon Dijon mustard
  • 2 tablespoons fresh cilantro, finely chopped
  • 1/4 – 1/2 teaspoon cumin powder
  • Salt and freshly ground black pepper to taste

Instructions

  1. Combine Ingredients: Add the lime juice, olive oil, minced garlic, honey or maple syrup, Dijon mustard, chopped cilantro, cumin powder, salt, and black pepper into a mason jar or a sealable container.
  2. Shake to Blend: Secure the lid tightly and shake the jar vigorously until all ingredients are fully blended and emulsified, creating a smooth vinaigrette.
  3. Refrigerate Before Use: Place the vinaigrette in the refrigerator to chill and allow the flavors to meld together for at least 10 minutes before serving.
  4. Store Properly: Keep the vinaigrette in an airtight container in the refrigerator. It will maintain its best quality for up to 5 days.

Notes

  • Adjust the amount of cumin powder to suit your taste preference, starting with 1/4 teaspoon and increasing to 1/2 teaspoon as desired.
  • Use fresh lime juice for the best vibrant flavor; bottled lime juice may alter the taste.
  • Honey or pure maple syrup provides a natural sweetness—choose based on dietary needs or flavor preference.
  • Shake well before each use as the ingredients may separate over time.
  • This vinaigrette pairs excellently with mixed greens, grilled chicken, seafood, or roasted vegetables.
