Ingredients

Liquid Base

  • 1 can (13.5oz) light coconut milk

Fruit and Flavorings

  • 1/4 cup fresh key lime juice
  • Zest of 1 key lime
  • 1/4 teaspoon vanilla extract

Add-ins

  • 1-1 1/2 cups ice
  • Sweetener of choice (such as honey, agave, or sugar)*
  • 1/4 teaspoon xanthan gum
  • 1 scoop unflavored collagen powder (optional, leave out for vegetarian/vegan)


Instructions

  1. Prepare Ingredients: Gather all ingredients including light coconut milk, fresh key lime juice and zest, vanilla extract, ice, sweetener, xanthan gum, and collagen powder if using.
  2. Blend Smoothie: Combine all ingredients in a blender and blend on high until the mixture is smooth and slightly thickened, approximately 30 seconds.
  3. Serve: Pour the smoothie evenly into 2 glasses. Optionally, garnish with additional key lime slices and toasted coconut flakes for added texture and flavor.

Notes

  • Adjust the amount of sweetener according to your taste preference.
