Ingredients
Liquid Base
- 1 can (13.5oz) light coconut milk
Fruit and Flavorings
- 1/4 cup fresh key lime juice
- Zest of 1 key lime
- 1/4 teaspoon vanilla extract
Add-ins
- 1-1 1/2 cups ice
- Sweetener of choice (such as honey, agave, or sugar)*
- 1/4 teaspoon xanthan gum
- 1 scoop unflavored collagen powder (optional, leave out for vegetarian/vegan)
Instructions
- Prepare Ingredients: Gather all ingredients including light coconut milk, fresh key lime juice and zest, vanilla extract, ice, sweetener, xanthan gum, and collagen powder if using.
- Blend Smoothie: Combine all ingredients in a blender and blend on high until the mixture is smooth and slightly thickened, approximately 30 seconds.
- Serve: Pour the smoothie evenly into 2 glasses. Optionally, garnish with additional key lime slices and toasted coconut flakes for added texture and flavor.
Notes
- Adjust the amount of sweetener according to your taste preference.
- Xanthan gum helps to thicken the smoothie and gives it a creamy texture.
- For a vegan or vegetarian version, omit the collagen powder.
