Ingredients

Gelatin Mixture

  • 1 envelope grass-fed gelatin (about 7 grams or 2 ½ teaspoons)
  • ¼ cup cold water
  • ⅓ cup boiling water

Mousse

  • ½ cup low carb sugar substitute (or more to taste, see notes)
  • 1 tablespoon lime zest
  • 2 cups cold whipping cream
  • ⅔ cup key lime juice


Instructions

  1. Soften Gelatin: Sprinkle the gelatin over the cold water in a small bowl and let it stand for 2 minutes to soften completely.
  2. Dissolve Gelatin: Add the boiling water to the gelatin and stir until fully dissolved and the mixture becomes clear. Allow it to cool slightly.
  3. Prepare Cream Mixture: In a large bowl, combine the low-carb sweetener and lime zest. Add the cold whipping cream and beat using an electric mixer until stiff peaks form.
  4. Add Gelatin and Juice: Pour the cooled gelatin mixture and key lime juice into the whipped cream mixture. Beat again until everything is well blended and smooth.
  5. Chill and Set: Refrigerate the mousse for at least two hours or until it is fully set. Keep covered while stored in the refrigerator before serving.

Notes

  • When using erythritol-based sweeteners, avoid exceeding ½ cup as it may crystallize and affect mousse texture.
  • For a sweeter mousse without crystallization, consider stevia or monk fruit extract as alternatives.
