Delightfully refreshing and low-carb, these Keto Cream Cheese Mints are the perfect sweet bite for keto dessert lovers. Made with creamy cream cheese, peppermint extract, and a blend of powdered and granular monkfruit/erythritol sweeteners, these mints are smooth, sweet, and sprinkled with a touch of festive garnish. Easy to prepare, they require no baking and can be enjoyed fresh from the fridge or frozen for an extra chill.
Ingredients
Main Ingredients
- 4 oz cream cheese
- 1 tsp pure peppermint extract
- 1 cup powdered monkfruit/erythritol sweetener (200g)
- 2 tbsp traditional or homemade sprinkles (10g)
- 2-3 tbsp granular monkfruit/erythritol sweetener
- Additional sprinkles for coating
Instructions
- Blend Cream Cheese and Peppermint: In a bowl, combine the cream cheese and pure peppermint extract. Blend until smooth, which should take about 30 seconds to 1 minute.
- Add Powdered Sweetener Gradually: Slowly add the powdered monkfruit/erythritol sweetener in portions, blending gently at first to avoid splashing, then increasing speed until all the sweetener is fully incorporated.
- Mix in Sprinkles: Stir in the traditional or homemade sprinkles gently with a spoon until evenly dispersed throughout the mixture.
- Form Dough Balls: The mixture will be thick, similar in texture to cottage cheese. Roll the dough into approximately 20 small balls to maintain optimal sweetness and texture.
- Coat the Balls: In a shallow dish, combine the granular monkfruit/erythritol sweetener and some sprinkles. Roll each dough ball in this mixture until fully coated.
- Refrigerate the Mints: Place the coated balls on a plate and refrigerate for 30 minutes to firm up.
- Create Fork Marks: Remove the mints from the fridge and lightly press down on each ball with a fork to create classic fork marks.
- Serve or Freeze: Serve immediately chilled or for a favorite presentation, freeze them overnight and enjoy frozen.
- Storage: Store any leftover mints in an airtight container or plastic bag in the freezer for freshness and longevity.
Notes
- These mints contain just 1 net carb each, making them a perfect keto-friendly treat.
- If the dough is too sticky to roll, add a little more powdered sweetener or lightly dust your hands with powdered sweetener.
- Refrigerating the dough for about 10 minutes before rolling can make handling easier.
- If cracks appear when pressing down with a fork, gently press the edges back together—these fix easily without affecting the appearance.
- Make the mints small, as they are quite sweet and intended to be similar to traditional mints rather than cookies.
