These Juicy Bison Burgers are a flavorful and lean alternative to traditional beef burgers, enhanced with a blend of spices and Worcestershire sauce for extra savory depth. Cooked to juicy perfection on the grill or stovetop and topped with melted cheddar cheese and fresh toppings, they make a perfect quick and satisfying meal.
Ingredients
For the Burgers
- 2 pounds ground bison
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 tablespoon Worcestershire sauce
Burger Assembly
- 4 soft hamburger buns
- 4 slices cheddar cheese
- Sliced tomato
- Bibb or green leaf lettuce
- Dill pickles
- Caramelized onions
- Ketchup
- Mayonnaise
- Burger sauce
Instructions
- Mix the Ingredients: Combine the ground bison with kosher salt, black pepper, garlic powder, onion powder, and Worcestershire sauce in a bowl. Gently mix using your hands until just combined to maintain a tender texture.
- Form Patties: Shape the meat mixture into equal-sized patties, each about 1 inch larger than your hamburger buns. Press a small indent in the center of each patty with your thumb to prevent ballooning during cooking.
- Grill the Patties: Preheat your gas or charcoal grill to high heat and ensure the grates are clean. Place the patties on the hot grill and cook undisturbed for about 3 minutes, then flip and cook the other side. Avoid flipping prematurely to allow a proper sear.
- Add Cheese on Grill: During the last minute of grilling, add a slice of cheddar cheese on each patty and close the grill lid to melt the cheese. Remove burgers and let them rest for 5 minutes before assembling.
- Alternate Stove Top Method: Heat 2 tablespoons of butter in a cast iron skillet over medium-high heat. Add the patties and cook for 2-3 minutes on the first side without moving to get a good sear. Flip and cook another 2-3 minutes until medium-rare to medium.
- Cheese on Stove Top: Place cheese slices on patties in the last minute of cooking, cover the skillet with a lid to melt the cheese thoroughly. Remove from heat and let rest for 5 minutes before building your burgers.
- Assemble Burgers: Place rested patties on the buns and top with sliced tomato, lettuce, dill pickles, caramelized onions, ketchup, mayonnaise, and burger sauce according to preference. Serve immediately and enjoy your juicy bison burgers.
Notes
- Do not overmix the meat to keep burgers tender and juicy.
- The thumb indent in the patty prevents puffing during cooking for even thickness.
- Cooking times may vary based on grill or stovetop heat intensity; aim for medium-rare to medium for best texture.
- Letting the burgers rest after cooking helps redistribute juices for maximum juiciness.
- Feel free to customize toppings and sauces to suit your taste.
