Instructions
- Heat the milk mixture: In a pot, combine the milk, whipping cream, vanilla seeds and pod, cinnamon sticks (or ground cinnamon), and ground nutmeg. Bring the mixture to a gentle simmer, then turn off the heat and let the spices and vanilla steep until slightly cooled. Remove the vanilla pod and cinnamon sticks before proceeding.
- Beat the egg yolks: In a separate bowl, whisk the egg yolks with the white sugar until the mixture becomes pale yellow and fluffy, indicating enough air has been incorporated.
- Combine milk and eggs: Slowly add the cooled milk and cream mixture to the beaten egg yolks, stirring continuously to ensure full incorporation and avoid curdling.
- Add rum and chill: Stir in the dark rum, then taste and adjust the sugar or rum as desired. Transfer the mixture to the refrigerator and chill for at least 3 to 4 hours, preferably overnight for best flavor.
- Whip egg whites and fold in: Just before serving, whip the reserved egg whites until soft peaks form. Gently fold the whipped egg whites into the chilled eggnog mixture to create a light, airy texture.
- Serve: Pour the eggnog into small glasses and garnish with a dusting of freshly grated nutmeg or cinnamon. Serve chilled as a festive holiday drink.
