Description

This Italian Chopped Salad is a quick and flavorful meal, combining crisp iceberg lettuce with savory prosciutto cotto, mortadella, provolone cheese, and optional pepperoncini for a tangy kick. Tossed in a creamy mayo-based dressing with Italian seasoning and pepperoncini juice, this salad offers a perfect balance of textures and flavors for a satisfying lunch or light dinner in just 10 minutes.

Ingredients

Salad

  • 1/2 head iceberg lettuce
  • 3 slices prosciutto cotto (or any sliced ham)
  • 3 slices mortadella
  • 3 slices provolone cheese
  • ⅓ cup pepperoncini (sliced, optional)

Dressing

  • 2 tablespoons mayo (more or less to taste)
  • 1 teaspoon Italian seasoning (more or less to taste)
  • 1 tablespoon pepperoncini juice (more or less to taste)

Instructions

  1. Chop the lettuce: Chop the iceberg lettuce into small, bite-sized pieces and place it on a clean cutting board.
  2. Add meats and cheese: Add the slices of prosciutto cotto, mortadella, provolone cheese, and pepperoncini (if using) onto the board with the lettuce.
  3. Finely chop all ingredients: Using a large sharp knife, chop all the ingredients together as finely as possible to evenly distribute all flavors.
  4. Add dressing: Add the mayo, Italian seasoning, and pepperoncini juice directly onto the chopped salad mixture.
  5. Mix and serve: Mix all ingredients thoroughly to coat the salad evenly with the dressing, then serve immediately and enjoy.

Notes

  • You can transfer the chopped salad into a bowl before adding and mixing the dressing if preferred.
  • For added protein or a lighter option, consider adding more meat or substituting with lean ground turkey.
  • Adjust the amount of mayo, seasoning, and pepperoncini juice to suit your taste preference.
  • This salad is best served fresh to maintain the crisp texture of the lettuce.
