Ingredients

Bacon and Aromatics

  • 6 slices thick cut bacon
  • 1 small onion, finely chopped

Vegetables and Liquids

  • 2 pounds fresh green beans, trimmed and cut into 2-inch pieces
  • 3/4 cup chicken broth

Seasoning and Garnish

  • Salt and fresh-ground black pepper to taste
  • 1/3 cup crumbled Gorgonzola cheese


Instructions

  1. Prepare the Bacon: Cut the thick-cut bacon slices into cross-wise strips. Breaking them apart slightly by hand is optional, but helps them cook evenly.
  2. Cook the Bacon: Turn the Instant Pot to SAUTE on HIGH HEAT and cook the bacon strips until they are quite crisp, about 5-10 minutes. Remove bacon and drain on paper towels.
  3. Sauté the Onion: Remove all but 2 tablespoons of bacon fat from the Instant Pot. Add chopped onion and cook on SAUTE HIGH until onions begin to brown.
  4. Add Green Beans and Broth: Add the trimmed and cut green beans into the Instant Pot along with 3/4 cup chicken broth.
  5. Pressure Cook: Lock the lid and ensure the valve is closed. Set the Instant Pot to MANUAL, HIGH pressure for 1 minute.
  6. Prepare Cheese and Release Pressure: While the beans cook, crumble the Gorgonzola cheese. When cooking finishes, perform a quick release carefully to avoid steam burns.
  7. Season and Serve: Remove the lid, season the green beans with salt and fresh ground black pepper. Use a slotted spoon to transfer beans to a serving platter. Sprinkle with the crispy bacon pieces and crumbled Gorgonzola cheese. Serve hot.
  8. Storage and Reheating: Leftovers reheat well and can be enjoyed the next day, though the dish is best freshly made.
