Ingredients

Jello Base

  • 3 Pounds Frozen or Fresh Strawberries
  • 1 Cup Sugar or Monk Fruit (Lakanto Classic Monk Fruit recommended; adjust to taste; honey can be used but quantity may vary)
  • 1 Tablespoon Fresh Lemon or Lime Juice (Optional)
  • 3 Tablespoons Unflavored Gelatin (3 Packets / 21 Grams)
  • ½ Cup Cold Water
  • 1 Teaspoon Vanilla Extract

For Molding

  • Baking Spray (for Cake Pans) – to coat a nonstick bundt cake pan

  • Heavy Cream or Whipped Cream


Instructions

  1. Prepare Strawberries: Place the frozen or fresh strawberries in a saucepan on the stove.
  2. Cook Strawberries: Heat over medium heat for 5-7 minutes until the strawberries become mushy, releasing their juices.
  3. Puree Strawberries: Use an immersion blender, standard blender, or food processor to puree the cooked strawberries until smooth.
  4. Strain Puree: Pass the pureed strawberries through a fine- or medium-mesh sieve to remove seeds, resulting in a smooth mixture.
  5. Mix Sweeteners and Flavor: Return the strained puree to the saucepan, gently heat, and stir in the sugar or monk fruit sweetener, vanilla extract, and optional lemon or lime juice. Adjust sweetness according to taste.
  6. Dissolve Sweetener: Heat gently until the sugar is fully dissolved, then remove the saucepan from heat.
  7. Bloom Gelatin: In a small bowl, combine ½ cup cold water with 3 packets (21 grams) of unflavored gelatin. Stir ensuring all gelatin is moist and let it sit for 5-10 minutes until thickened and gelled.
  8. Incorporate Gelatin: Gently reheat the strawberry puree without boiling, then turn off the heat and stir in the bloomed gelatin until fully dissolved.
  9. Pour Into Mold: For cake pan preparation, spray a nonstick bundt cake pan with baking spray and pour the jello mixture in. Alternatively, use silicone molds or a bowl that holds at least 6 cups.
  10. Refrigerate to Set: Refrigerate the mixture for 4 hours or preferably overnight until the gelatin is fully set. To release from a cake pan, gently loosen edges with fingers and flip onto a serving platter. If stuck, dip the cake pan briefly (no more than 5 seconds) in hot water to loosen.
  11. Serve: Garnish with fresh strawberries or whipped cream as desired.
  12. Storage Tips: Keep jello cakes refrigerated, not leaving them out more than 30 minutes. Store covered in the refrigerator for up to 5 days.
  13. Do Not Freeze: Freezing is not recommended. Use leftover jello to make a milkshake by blending it.
