Ingredients
Protein
- 6-8 chicken sausages, cut into chunks diagonally
Vegetables
- 1 medium carrot, finely diced
- 2 shallots, sliced
- 1 bunch asparagus (about 225g or 8oz), diced or cut into short lengths
- 2 garlic cloves, minced
- ¾ cup frozen peas
Pantry
- 1 tablespoon olive or rapeseed oil
- 1 tablespoon all purpose flour
- 1 teaspoon Dijon mustard
- 1 cup chicken stock (240ml)
- 1 can cannellini beans, drained and rinsed
Dairy & Herbs
- ¼ cup heavy cream/double cream (60ml)
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Instructions
- Cook the Sausage: In a cast iron skillet or frying pan, heat and fry the chicken sausage chunks on all sides according to package instructions until fully cooked through and browned. Once done, remove the sausages from the pan and set aside on a plate.
- Sauté Vegetables: Add the olive or rapeseed oil to the same pan. Add the finely diced carrots along with a pinch of salt and cook for 2 to 3 minutes until they start to soften. Next, add the sliced shallots and sauté for an additional 2 minutes. Then, add the diced asparagus and minced garlic and cook for another 1 to 2 minutes to meld the flavors.
- Add Flour and Liquids: Sprinkle the all-purpose flour over the vegetables and stir well to coat everything evenly. Cook for about 1 minute to bake out the raw flour taste. Then stir in the Dijon mustard and gradually pour in the chicken stock, stirring constantly. Bring this mixture to a simmer, allowing the sauce to thicken slightly.
- Combine and Simmer: Stir in the drained cannellini beans, frozen peas, and heavy cream. Return the cooked sausages to the pan and simmer everything together gently for 5 to 10 minutes, or until the vegetables are tender and the sauce has thickened to your liking. Season the dish with salt and pepper to taste.
- Garnish and Serve: Once cooked, garnish the skillet with freshly chopped parsley for a pop of color and fresh aroma. Serve the creamy chicken sausage skillet warm as a complete and satisfying meal.
Notes
- You can substitute chicken sausages with turkey or pork sausages if preferred.
- For a lighter version, use half-and-half or milk instead of heavy cream.
- If you want a gluten-free option, replace all-purpose flour with a gluten-free flour blend or cornstarch.
- Adjust seasoning towards the end to avoid over-salting due to the chicken stock and sausages.
- Adding a squeeze of lemon juice at the end can brighten the flavors.
