Ingredients

Teriyaki Sauce

  • ½ cup reduced-sodium soy sauce (or tamari)
  • 1 tablespoon rice vinegar
  • 3 tablespoons brown sugar (or honey)
  • 2 cloves garlic, grated
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon cornstarch mixed with 1 tablespoon water

Main Ingredients

  • 1 tablespoon neutral oil (such as avocado or olive oil)
  • 1 pound ground turkey
  • ¼ teaspoon kosher salt
  • 2 cups broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1 cup carrots, shredded
  • 8 ounces cooked noodles (such as spaghetti, udon, ramen, or rice noodles) – optional if serving over rice


Instructions

  1. Make the Sauce: In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar or honey, grated garlic, and grated ginger. Then add the cornstarch-water mixture and stir well to combine. This sauce will thicken once cooked with the turkey and vegetables.
  2. Brown the Turkey: Heat the neutral oil in a large, high-sided skillet or pot over medium-high heat. Add the ground turkey and kosher salt. Cook, breaking apart the meat with a spatula, until the turkey is browned and almost fully cooked, about 5 to 7 minutes.
  3. Add The Veggies: Lower the heat to medium. Add the broccoli florets, thinly sliced red bell pepper, and shredded carrots to the skillet with the turkey. Stir everything together and cook for 3 to 5 minutes until the vegetables are just tender but still retain a nice crunch.
  4. Simmer with Sauce: Pour the prepared teriyaki sauce over the turkey and vegetables in the skillet. Stir well to coat all the ingredients. Let it simmer on low heat for 2 to 3 minutes until the sauce thickens slightly and becomes glossy.
  5. Toss with Noodles (Optional): Add the cooked noodles to the skillet and toss thoroughly to combine with the teriyaki mixture. Cook on low for an additional 1 to 2 minutes until noodles are heated through and soak up some of the sauce. Skip this step if serving the bowl over rice instead of noodles.
  6. Serve: Serve the teriyaki bowls warm. Garnish with chopped green onions and sesame seeds if desired. For extra heat, drizzle chili crisp or sriracha on top to taste.
