Description

These Ground Turkey Tacos offer a quick, flavorful, and healthy weeknight dinner option made with simple ingredients. Ground turkey is simmered with a blend of spices and salsa, then topped with fresh garnishes and served in warm tortillas for a satisfying meal the whole family will enjoy.

Ingredients

Main Ingredients

  • 1 tablespoon avocado or olive oil
  • 1 pound 93/7 ground turkey
  • 4 cloves minced garlic
  • 1/2 cup diced onion
  • 1 tablespoon ground cumin
  • 1/2 tablespoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chipotle powder
  • 1 teaspoon arrowroot starch
  • 1/2 cup salsa
  • juice of one lime
  • 1 teaspoon salt, plus more to taste

Toppings/Garnishes

  • white corn or flour tortillas
  • chopped tomatoes
  • chopped romaine lettuce
  • shredded white cheddar
  • red onion
  • thinly sliced jalapeño
  • chopped cilantro
  • lime wedges, for serving

Instructions

  1. Heat the skillet: Heat a skillet over medium-high heat until hot. Add the oil to the skillet.
  2. Brown the turkey: Add the ground turkey to the skillet. Break it up as it cooks. Once it starts browning, add the minced garlic and diced onion. Continue cooking until the turkey is no longer pink and the onion is translucent.
  3. Add spices: Lower the heat to medium. Add ground cumin, chili powder, paprika, dried oregano, chipotle powder, salt, and arrowroot starch. Stir and cook for about 1 minute until the spices become fragrant.
  4. Simmer with salsa: Stir in the salsa and lime juice until combined. Let the turkey mixture simmer for 3 to 4 minutes, allowing it to thicken slightly. Remove from heat.
  5. Assemble and serve: Warm the tortillas. Spoon the turkey mixture into each tortilla, then top with your choice of chopped tomatoes, romaine lettuce, shredded cheddar, red onion, jalapeños, cilantro, and a squeeze of fresh lime. Enjoy your tacos!

Notes

  • You can substitute arrowroot starch with cornstarch or skip it for a looser sauce.
  • Use 99% lean ground turkey for a leaner option, but cooking time may be slightly shorter.
  • For milder tacos, omit or reduce the chipotle powder and jalapeños.
  • Leftover turkey mixture can be refrigerated for up to 3 days.
  • Warm the tortillas before serving to make them more pliable and flavorful.
