Instructions
- Prepare the Bread: Spread about 1 tablespoon of Green Goddess Herb Pesto onto each slice of bread. Keep in mind the pesto has a strong flavor that leans slightly bitter from kale and garlicky notes, so adjust the amount to your taste sensitivity.
- Assemble the Sandwich: On one slice of pesto-coated bread, layer ¼ cup shredded Monterey Jack cheese, a handful of fresh baby spinach, sliced avocado, crumbled feta cheese, season with salt and pepper, then add the remaining ¼ cup Monterey Jack cheese.
