Ingredients

Bread and Spread

  • 2 slices sturdy bread
  • 2-3 tablespoons Green Goddess Herb Pesto

Cheeses

  • ½ cup shredded Monterey Jack cheese
  • 2 tablespoons crumbled feta cheese

Veggies & Extras

  • handful fresh baby spinach
  • ¼ avocado, sliced
  • salt and pepper, to taste

Cooking Fats

  • grapeseed oil (or other neutral oil for cooking), about 1 tablespoon
  • butter (optional, for cooking)


Instructions

  1. Prepare the Bread: Spread about 1 tablespoon of Green Goddess Herb Pesto onto each slice of bread. Keep in mind the pesto has a strong flavor that leans slightly bitter from kale and garlicky notes, so adjust the amount to your taste sensitivity.
  2. Assemble the Sandwich: On one slice of pesto-coated bread, layer ¼ cup shredded Monterey Jack cheese, a handful of fresh baby spinach, sliced avocado, crumbled feta cheese, season with salt and pepper, then add the remaining ¼ cup Monterey Jack cheese. Top it with the second slice of bread, pesto side down, and press gently to hold together.
  3. Heat the Pan: Warm 1 tablespoon of grapeseed oil in a frying pan over medium-low heat. If using, add butter to the oil and allow it to fully melt for enhanced flavor and browning.
