Description

These fudgy ube brownies combine the rich, nutty flavor of browned butter with the unique sweet floral notes of ube halaya and ube extract, creating a vibrant purple treat that is moist, dense, and delightfully indulgent. Perfectly balanced with white chocolate and a hint of flaky salt on top, these brownies are an irresistible twist on a classic dessert.

Ingredients

Brown Butter & Chocolate Mixture

  • ½ cup unsalted butter
  • 4 oz white chocolate

Wet Ingredients

  • ¾ cup granulated sugar
  • ¼ cup light brown sugar
  • 3 eggs (room temperature)
  • 1 tsp vanilla extract
  • ½ tsp ube extract
  • ¼ cup ube halaya
  • ¼ tsp salt

Dry Ingredients

  • ½ cup all purpose flour
  • ¼ tsp flaky salt (optional, for topping)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (177°C) to ensure it reaches the perfect temperature for baking the brownies evenly.
  2. Prepare Baking Pan: Grease an 8×8 inch baking pan and line it with parchment paper to prevent sticking and make removal easier.
  3. Brown the Butter: Melt the unsalted butter over medium heat, then reduce the heat to low and cook it until it develops brown bits and a nutty aroma, being careful not to burn it.
  4. Melt White Chocolate: Place white chocolate in a bowl and pour the browned butter over it. Stir until the chocolate fully melts and forms a smooth mixture. Set aside to cool slightly.
  5. Whisk Wet Ingredients: In a large bowl or the bowl of your stand mixer, combine granulated sugar, light brown sugar, eggs, vanilla extract, ube extract, ube halaya, and salt. Whisk with a hand or stand mixer on medium-high speed until the mixture becomes fluffy and light purple in color, about 5 to 10 minutes.
  6. Combine Mixtures: Add the warm white chocolate and browned butter mixture to the whipped wet ingredients and mix until thoroughly incorporated.
  7. Add Flour: Gently fold in the all-purpose flour using a spatula, being careful not to overmix to maintain the brownies’ fudgy texture.
  8. Transfer Batter: Pour the batter evenly into the prepared baking pan, smoothing the top with a spatula.
  9. Bake First Stage: Bake the brownies for 20 minutes to start setting the edges and middle.
  10. Release Air Bubbles: Remove the pan from the oven and gently tap it on the counter to release any trapped air bubbles. Optionally, sprinkle flaky salt on the surface to add a salty contrast.
  11. Bake Second Stage: Return the brownies to the oven and bake for an additional 15 to 20 minutes until a toothpick inserted near the center comes out with moist crumbs.
  12. Cool and Serve: Let the brownies cool completely in the pan for about 20 minutes before cutting into squares and serving.

Notes

  • Brown butter adds a nutty depth; watch closely to avoid burning.
  • Use room temperature eggs to achieve the best whisking volume.
  • Whisking the wet ingredients until fluffy is key to a light texture.
  • Folding in flour gently helps prevent tough brownies.
  • Flaky salt topping is optional but enhances flavor contrast.
  • Store leftover brownies in an airtight container at room temperature for up to 3 days.
