Description

Delightfully moist and fruity, these Easy Strawberry Brownies are a quick and simple twist on traditional brownies using strawberry cake mix and a luscious strawberry glaze. Perfect for berry lovers seeking a sweet treat with vibrant flavor and a beautiful pink hue.

Ingredients

Brownie Batter

  • 1 box strawberry cake mix
  • 2 large eggs
  • 1/3 cup salted butter, melted (or 1/3 cup oil)
  • 1 teaspoon strawberry extract

Strawberry Glaze

  • ¾ cup powdered sugar
  • 2 Tablespoons strawberry preserves
  • 1 ½ Tablespoons milk

Instructions

  1. Preheat and prepare pan: Preheat the oven to 350°F. Spray an 8×8-inch or 9×9-inch baking dish with nonstick cooking spray and line the bottom with parchment paper, ensuring it extends at least two sides for easy brownie removal later. Set aside.
  2. Mix batter: In a large bowl, combine the strawberry cake mix, 2 large eggs, melted salted butter, and strawberry extract. Stir thoroughly until all ingredients are combined and the batter is thick.
  3. Bake the brownies: Spread the thick batter evenly into the prepared baking pan. Bake in the preheated oven for 18-25 minutes or until a toothpick inserted into the center comes out clean. Baking times may vary depending on your oven.
  4. Cool: Remove the brownies from the oven and place the pan on a wire rack. Allow to cool completely to room temperature before proceeding to the glaze.
  5. Prepare glaze: In a small bowl, whisk together powdered sugar, strawberry preserves, and milk until smooth and well combined to form a glaze.
  6. Glaze the brownies: Pour the strawberry glaze evenly over the cooled brownies and smooth the surface with a spatula for an even coating.
  7. Serve: Cut the glazed brownies into 9 large squares or 12 smaller pieces. Serve and enjoy this fruity, sweet delicacy!

Notes

  • For a dairy-free or oil alternative, replace melted butter with 1/3 cup oil.
  • Ensure the brownies are fully cooled before applying the glaze to prevent melting or soaking.
  • If you don’t have strawberry extract, vanilla extract is an acceptable substitute but will alter the strawberry flavor slightly.
  • Baking times can vary so start checking at 18 minutes to avoid overbaking, which can cause dryness.
  • Use parchment paper to help lift the brownies out easily and maintain their shape.
