Ingredients
Crust and Dough
- 1 cup graham cracker crumbs (1 sleeve of whole graham crackers, crushed)
- 1 1/4 cups self-rising flour (see AP flour substitution in notes)
- 1/2 cup unsalted butter (at room temperature)
- 1/2 cup light brown sugar
- 1/3 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
Toppings
- 10 large marshmallows (cut in half)
- About 20 chocolate Hershey Kisses
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line baking sheets with parchment paper or lightly grease them with non-stick cooking spray to prevent sticking.
- Make the Dough: Using an electric handheld mixer, beat the softened butter, light brown sugar, and granulated sugar together for 2-3 minutes until the mixture is light and creamy. Incorporate the graham cracker crumbs and mix until combined. Add the egg and vanilla extract, mixing until fully incorporated. Finally, add the self-rising flour gradually, mixing until just combined to avoid overworking the dough.
- Shape Cookies: Scoop out tablespoons of dough and roll each into a smooth, round ball. Arrange the dough balls on the prepared baking sheet, spacing them 1 to 2 inches apart to allow for spreading.
- Bake: Bake the cookies for 8 to 12 minutes, or until the edges turn a light golden brown, indicating they are cooked through.
- Prepare Toppings: While the cookies are baking, cut the 10 large marshmallows in half using kitchen scissors or a sharp knife. Unwrap the 20 Hershey Kisses and place them on a plate, ready for topping.
- Add Marshmallows: Remove the baked cookies from the oven. Gently press a half marshmallow, sticky side down, onto the top of each cookie. Allow the cookies to cool slightly while you prepare to broil.
- Broil Marshmallows: Preheat your oven broiler. Place the cookies under the broiler for 1 to 2 minutes, watching closely so the marshmallows toast to a light golden brown without burning.
- Add Hershey Kisses: Once toasted, remove the cookies from the oven and immediately press a Hershey Kiss onto the top of each warm marshmallow to slightly melt the chocolate.
- Cool and Serve: Let the cookies cool completely so the chocolate sets. Enjoy your gooey, chocolatey s’mores cookies!
Notes
- For a substitution of self-rising flour, combine 1 1/4 cups all-purpose flour with 1 1/2 teaspoons baking powder and 1/4 teaspoon salt.
- Ensure butter is softened at room temperature for easier mixing and better texture.
- Watch marshmallows carefully while broiling as they can burn quickly.
- For a crunchier cookie, reduce bake time slightly; for a softer cookie, do not overbake.
