Instructions
- Preheat oven: Set your oven to 350 degrees Fahrenheit to prepare for baking the casserole later.
- Prepare casserole dish: Lightly spray a 9×13-inch casserole dish with nonstick cooking spray to prevent sticking.
- Crush Doritos: Gently crush the Doritos chips, separating them into two portions: two cups crushed finely, resembling breadcrumbs, and one cup loosely crushed with larger chunks to be used as the topping.
- Cook beef and onions: In a large skillet over medium heat, cook the ground beef with diced onions until the beef is browned and onions are soft. Drain excess grease.
- Add garlic: Stir in minced garlic and cook for about one minute until fragrant.
- Combine ingredients: Add the frozen corn, taco seasoning packet, canned diced tomatoes with green chilies (including the liquid), and the finely crushed two cups of Doritos. If using, add the black beans now. Stir well to combine and cook briefly to heat everything.
- Add sour cream and cheese: Remove the skillet from heat and stir in the sour cream and two cups of the Mexican blend cheese until fully incorporated.
- Assemble casserole: Pour the mixture evenly into the prepared casserole dish. Place the dish into the preheated oven and bake for 5 minutes until warmed through.
- Add topping and finish baking: Remove the casserole from the oven, sprinkle the remaining one cup of cheese over the top, then add the loosely crushed one cup of Doritos. Return to the oven and bake for an additional 5 minutes or until the cheese is melted.
- Serve: Take the casserole out of the oven and garnish as desired with sliced green onions, diced tomatoes, shredded lettuce, avocado slices, and extra sour cream. Serve warm and enjoy.
