Ingredients

For the Taco Meat

  • 10 oz vegan ground beef
  • 1 tablespoon olive oil
  • 1/3 cup onions, diced
  • 3 cloves garlic, minced
  • 2 teaspoon taco seasoning

For the Salad

  • 14 oz iceberg lettuce, chopped
  • 3/4 cup vegan cheddar, shredded
  • 1 cup black olives, sliced
  • 1/2 cup cherry tomatoes, chopped
  • 1 avocado, cut into cubes
  • 2 big handfuls Doritos, lightly crushed (use gluten-free if preferred)
  • 1 (15 oz) can black beans, drained

Dressing

  • Catalina dressing, as needed


Instructions

  1. Prepare the Taco Meat: Heat 1 tablespoon olive oil in a frying pan over medium heat. Add diced onions, minced garlic, vegan ground beef, and 2 teaspoons taco seasoning. Cook and stir for about 5 minutes until the vegan beef is browned and the onions are softened. Remove from heat and set aside.
  2. Assemble the Salad Base: In a large mixing bowl, combine chopped iceberg lettuce, shredded vegan cheddar, sliced black olives, chopped cherry tomatoes, cubed avocado, lightly crushed Doritos, and drained black beans. Toss gently to mix all ingredients evenly.
  3. Add the Taco Meat: Add the cooked taco meat mixture from the frying pan into the salad bowl. Mix thoroughly to distribute the seasoned vegan beef throughout the salad.
