Perfectly baked to golden perfection, they offer a satisfying texture and delicious taste that’s ideal for a quick weeknight dinner or a family-friendly meal.
Ingredients
Coating Mixture
- 1 cup crushed corn flakes
- 1 teaspoon paprika
- 1 teaspoon lemon-pepper seasoning
- ½-¾ teaspoon kosher salt
- ½ teaspoon cayenne pepper
Other Ingredients
- 1 cup all-purpose flour
- 2 large eggs (beaten)
- 1 pound cod fillets (cut into 1-inch strips)
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (204°C). Line a baking sheet with parchment paper and spray it liberally with non-stick cooking spray to prevent the fish sticks from sticking during baking.
- Prepare Coating Mixtures: In a shallow bowl, combine crushed corn flakes, paprika, lemon-pepper seasoning, kosher salt, and cayenne pepper; stir until well mixed. Place the all-purpose flour in a separate shallow bowl and the beaten eggs in another shallow bowl.
- Coat the Fish: Take each cod strip and first dip it into the flour, ensuring both sides are coated completely. Next, dip the floured fish strip into the beaten eggs, then finally coat it thoroughly with the seasoned cornflake mixture. Place the coated fish sticks on the prepared baking sheet.
- Spray and Bake: After coating all the fish strips, spray the tops generously with non-stick cooking spray to promote browning and crispiness. Bake in the preheated oven for 12 to 14 minutes, or until the fish just begins to flake easily with a fork and the coating is golden and crispy.
Notes
- Use cod or another firm white fish for the best texture.
- For extra crispiness, avoid overcrowding the baking sheet to allow even heat circulation.
- If you prefer, swap corn flakes with panko bread crumbs for a different crunch.
- Monitor closely near the end of baking time to prevent overcooking the fish.
- Serve with your favorite dipping sauce such as tartar sauce or a squeeze of fresh lemon.
