Instructions
- Prepare Ingredients: Rinse and roughly chop the cilantro to measure about ¾ cup. Remove the seeds from the jalapeño to reduce heat, or keep seeds for a spicier dressing.
- Combine Ingredients: Add the cilantro, olive oil, fresh lime juice, garlic, jalapeño, sugar or honey or maple syrup, salt, and freshly ground black pepper into a blender or food processor.
- Blend Until Smooth: Blend all ingredients together until you achieve a smooth and creamy consistency. You may scrape down the sides as needed to ensure everything is well combined.
- Adjust Consistency and Taste: Taste the dressing and adjust the salt, sweetness, or spice level as desired. Optionally, thin the dressing with 1-3 tablespoons of water if too thick, especially if you add avocado or yogurt.
