  • 1 bunch cilantro (about ¾ cup fresh chopped cilantro)
  • 1/3 cup olive oil
  • 3 tablespoons fresh lime juice
  • 1 tablespoon sugar, honey, or pure maple syrup
  • 1 clove garlic
  • 1 jalapeño, seeded
  • 1/4 teaspoon salt, plus more to taste
  • Freshly ground black pepper to taste


Instructions

  1. Prepare Ingredients: Rinse and roughly chop the cilantro to measure about ¾ cup. Remove the seeds from the jalapeño to reduce heat, or keep seeds for a spicier dressing.
  2. Combine Ingredients: Add the cilantro, olive oil, fresh lime juice, garlic, jalapeño, sugar or honey or maple syrup, salt, and freshly ground black pepper into a blender or food processor.
  3. Blend Until Smooth: Blend all ingredients together until you achieve a smooth and creamy consistency. You may scrape down the sides as needed to ensure everything is well combined.
  4. Adjust Consistency and Taste: Taste the dressing and adjust the salt, sweetness, or spice level as desired. Optionally, thin the dressing with 1-3 tablespoons of water if too thick, especially if you add avocado or yogurt.
  5. Serve or Store: Use immediately as a salad dressing or marinade. For storage, keep in an airtight container in the refrigerator up to 2 weeks, or 3-4 days if avocado or yogurt is added.

  • For a creamy dressing variant, add ¼ cup Greek yogurt or ½ avocado before blending.
  • Adjust jalapeño amount to your spice preference; removing seeds reduces heat.
  • Store leftover dressing in an airtight container refrigerated up to 2 weeks without creamy additions; with avocado or yogurt, consume within 3-4 days for optimal freshness.
