Description
A creamy and flavorful Black Bean Dip that combines sautéed jalapeños and onions with black beans, lime juice, and spices, topped with melted cheddar cheese. Perfect for serving warm with tortilla chips as a crowd-pleasing appetizer or snack.
Ingredients
Vegetables and Aromatics
- 2 jalapeños, deseeded and diced small
- ½ yellow onion, diced
- 3 cloves garlic, minced

- 1 Tbsp olive oil
- 1 tsp salt
- 2 15 oz. cans black beans (one with liquid, one rinsed and strained)
- 2 Tbsp lime juice
- 2 tsp apple cider vinegar
- 1 cup shredded cheddar cheese
- ⅛ tsp chili powder
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for melting the cheese topping later.
- Sauté Jalapeños and Onions: Heat olive oil in a pan over medium heat. Add the diced jalapeños and onions with salt and cook, stirring occasionally, until they are softened and glossy, about 6 minutes.
- Add Garlic: Add the minced garlic to the pan and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Process Beans: In a food processor, combine both cans of black beans (one rinsed and drained, the other with liquid), along with the sautéed jalapeños, onions, lime juice, and apple cider vinegar. Process until smooth and creamy.
- Transfer to Oven-safe Dish: Pour the black bean mixture into a 9-inch cast iron skillet or a similar oven-safe dish, spreading evenly across the bottom.
- Top with Cheese and Spices: Sprinkle the shredded cheddar cheese evenly over the black bean dip, then dust with chili powder for a bit of added heat.
- Bake to Melt Cheese: Place the skillet in the preheated oven and bake until the cheese is fully melted and bubbly, about 10 minutes.
- Serve Hot: Remove from the oven and serve immediately with your favorite tortilla chips and optional toppings like sour cream, salsa, or chopped cilantro.

- For a spicier dip, keep the seeds in the jalapeños or add extra chili powder.
- Can be made ahead and baked just before serving for convenience.
